Owner / Head chef
Chef Edwin has been passionate and obsessed about food his whole life. Founder of the beloved Zoe Ma Ma in Boulder and Denver, Chimera is his vision for a Pacific Rim restaurant with an elevated sensibility of deeply rooted traditional cuisine. When not creating beautiful and flavorful food for both restaurants, he enjoys time with his family, living in beautiful downtown Boulder.
Brodie grew up in Boulder but has lived and worked in Denver for the past 15 years. Recently, after 2 years with the Bar Dough team in the Highlands and learning from some of the best Colorado has to offer in restaurant hospitality, he received a call from an old friend; Chef Edwin. With a similar view of food, hospitality and giving guests an unforgettable experience, they teamed up to build Chimera. When not in the restaurant or fixing up his house, he enjoys the Colorado outdoors and all its splendor including snowboarding, mountain biking and camping.
